The weather here has been so crap lately, all snowy and cold and rainy, and when the weather is bad all I want to do is eat comfort food.
Mashed potatoes are probably my number one comfort food but so is broccoli cheddar cheese soup!
I was at panera bread with my sisters and my brother-in-law a few months back and the have the BEST broccoli cheddar soup I’ve ever had.
So delicious, not overly cheesy with such a good balance of broccoli and carrots and they bring it to you with a nice big slice of a crusty loaf of bread.
So one day I was looking up recipes on line and found a copy cat of the panera bread recipe! I tried it out and it actually turned out AMAZING, so tasty, and the portion the recipe yields is enough to last a few days but it also freezes really well.
I was expecting it to be really hard, but the whole process only took me about an hour, and that was the first time I had ever made it.
I would absolutely recommend this recipe for anyone who is looking for a nice comforting soup to have for lunch or dinner. I also thing adding a few bacon bits would make it all the more delicious!
